1 1/2 lbs of Italian wheat bread
2 1/2 lbs of ground beef
4 cups shelled walnuts - finely ground
1 lb raisins
parsley chopped - a good handful
celery - probably 1 1/2 cups
onions - probably 1 1/2 cups
Cut the wheat bread into small pieces (I still do it by hand) place in small covered roasting pan and let sit overnight to dry out a bit.
The celery and onions are diced. I like them a bit smaller, but DH does the chopping and sometimes I think the celery is too big, but I won't complain.
Melt about 1/2 stick of butter in a frying pan. Cook onions, celery, ground beef and parsley until ground beef is crumbly and onion is cooked - add salt and pepper to taste.
Mix the beef mixture with the bread, then stir in the ground walnuts and raisins.
Cook at 350 for about an hour. I use the old fashioned blue dotted enamel roasting pan. I set the timer and shake the pan every 15 minutes. If you don't do this, the bottom may burn. Since everything is cooked the baking part is to make it brown, soften the raisins, and meld in the walnut flavor.
This is half of what I used to make years ago. You could try to scale it back further. I wish you could visit D'Amatos! It's a wonderful place.
