Oh my gosh, aroseisarose! That was you who posted the coconut cake recipe?! Thank you, thank you!

I can't tell you how many times I've made this now family favorite cake. It was my beloved mama's favorite.

With pleasure, here is my modified version:

a) 1 Box Duncan Hines whitre or (coconut if you can find it at Meijer) cake mix. I use either a 9" x 13" pan or two 8" or 9" round cake pans. Bake according to directions.

b) Allow cakes to cool on baking rack.

c) Using a straw, poke holes in the cake(s).

d) Here is my variation: Mix in a 1:1 ratio a small can (4 oz) cream of coconut and condensed milk.
Pour mixture over cake. Take a spatula and lightly smooth the mixture into the holes.
Frost cake(s) with a regular sized container of Cool Whip and top with flaked, sweetened coconut.
If making 2 round cakes, I fill the layers in between with Cool Whip as well.

BTW, Chocolate Cool Whip tastes awesome. You could even substitute this for the regular flavor. I haven't tried it yet but I will.
